A meat product made only with meat from inspected swine, calabrese is a smoked sausage with a striking flavor of the traditional cuisine of Minas Gerais. It is a sausage widely used in typical Minas Gerais dishes. With no need to mention names, it used to be eaten by a group of people known as ‘tropeiros’.
